Easy Scones

Scones are easy to make and delicious to eat. Scones are a classy little breakfast, brunch or tea snack. Don’t be intimidated by the fact that they’re British. They’re simple to make and really pretty quick. Try them yourself!


makes 8-12, depending on desired size of scones

2 cups all-purpose flour
1/3 cup sugar
1 t. baking powder
1/4 t. baking soda
1/4. t salt
8 T (1 stick) unsalted butter, cut into pieces and frozen
1/2 cup sour cream
1 large egg

egg yolk for egg wash
2 T sugar for sprinkling

Preheat oven to 400.

In food processor, combine flour, 1/3 cup sugar, baking powder, baking soda, and salt. Pulse several times until mixed. Add frozen pieces of butter. Pulse until mixture resembles coarse meal.

In a separate bowl, whisk together egg and sour cream until smooth. Add flour mixture and stir with a wooden spoon to combine. Dust your hands with flour, and using your hands, form dough into a ball.

Split dough into 2 balls and place on a floured surface. Flatten each into about a 3/4- inch thickness, forming 2 disks. In a small bowl, beat egg yolk and then brush onto disks. Sprinkle with sugar and, using a sharp knife, cut each disk into 4 or 6 pieces (depending on desired size of scones), as you would cut a pizza or pie.

Place scones on a parchment paper-lined cookie sheet approximately 1 inch apart. Bake until golden, about 15 minutes. Cool for 5 minutes. Serve warm or at room temperature. Best eaten the same day.
